The first uniforms we officially saw in the Star Trek universe were those from the failed pilot The Cage from TOS, which was technically third in the timeline. These lasted exactly one episode. The second pilot, Where No Man Has Gone Before, brough a new set of uniforms. Notice Spock is wearing command gold and that the necks of the uniforms are mock turtle necks. The neck color also matches the uniform color. Christine Chapple’s uniform, however, has a cowl neck while that of the original doctor is the same as the other crew’s. Here, Sulu is also wearing blue.
In The Star Trek universe, the first series in the timeline (so far) was Enterprise. The uniforms used by the crew were basically jumpsuits and harken back to the workwear used by NASA. Dr. Phlox and T’Pol wore clothing based on their rank, position and planet of origin as the rest of the crew were from Earth. Next in the order of things comes Discovery, which takes place after the events of Enterprise but several decades befote The original Series (TOS). As you can see here, the uniforms still kept a jumpsuit-like appearance for utility, but were much more futuristic looking and ornamental. Color designation for department specialty still had not yet appeared.

To me, these are some of the best done in Trek as they are dignified and professional looking. In the third film, The Search for Spock, the uniforms changed again. The styling has changed, but the maroon is still there in the tunics. Notice McCoy’s casual outfit, very similar to something you might wear today. Sulu, however, is now wearing work overalls. Next up are the uniforms from the first season of Star Trek: The Next Generation (TNG) episode Enter at Farpoint. Notice that Worf’s shoulder belt here is gold in color.
